Any tips in caring for black moors? Preferred food, pH, temp, etc... Also
I heared that many black moors lose their color over time. Any food/diet
suggestions to avoid this?

non color enhanced food is best. otherwise, they are like other fancy GF.

I'm pretty sure you're at the mercy of genetics and luck.
I have one that has remained black for exactly a year now.
I was careful to buy a relatively large specimen, which might
presumably be older, thus "proven" to be color-stable.
I also made sure it was uniformly velvety looking, not shiny.
I also have it in a tank with black sand as the substrate: maybe
they change colors to better escape predators from above?
Finally, I feed it only non-color-enhancing food, chiefly ProGold.

Mind you, I have no idea if any of those things have anything
to do with the fact that its stayed solidly black for 12 months.
Truth be told, I sort of doubt it. But it makes me happy and the
fish healthy, the only issues that matter, I think.
