I have 2 fish, a shubunkin and a fantail who usually live happily together.
both are over a year old.
The past couple of days (usually in the morning), the Fantail has been
chasing the other one round the tank for hours at a time, nudging her
underside, the occassional nibble, and sometimes forcing her to "jump" out
of the water in order to get out of the way.
Could this be them mating, playing, or even possibly some bullying.
If anyone could shed some light on this, I would be truely grateful

yes, but do check the water parameters and do a couple large water changes, add a bit

Certainly sounds like mating to me. Try and keep the water temperature stable.
That should
help minimise 'mating' behaviour.
