Can a rotting dead cadavre, wrapped
around a filter intake, but not clogging the filter,
cause the biofilter to crash? Can the water get
poisoned but nothing shows up on the testers,
no Ammo, no Nitrite, no Nitrate, good KH/GH?
Can a fish hit by an ammo spike only die weeks later?

Yup. Hydrocarbons can poison the water and not show up on the tests.
Lots of things can.

If its gills got frapped, yup.
Also the ammonia spike can make the fish an easier target for diseases
that it might have been able to handle if fully healthy.

yup. one reason I hate snails in GF tanks. they die and poison the whole system
