Some of my white gravel and fake plants are turning yellow.. Why ?

Have you medicated the tank? Some medications dye ornaments and would be
especially noticable on white ornaments. Also, how old are your
decorations/gravel - the plastic may be getting old. Some gravel is coated
with plastic.
That's all I can think of since you have not provided much information about
the inhabitants, age, size, etc of your tank.
