I'm a planted aquaria newbie.
Just wondering: when dosing, the nutrients dosed are added into the water
but most water plants have roots in the substrate. Therefore, how does an
aquatic plant with roots in the substrate asorb the nutrients? Thanks.

Add some very slow dissolving root tabs.

They don't. Most aquatic plants (even the rooted ones) absorb the
majority of their nutrients from the water column.
