In my pond I typically only add Rock Salt - 99.x % pure - no additives - and
then just for 'medicinal' purposes. However, I am led to believe that
adding a steady level is beneficial for livebearers. Is this okay to be used
for my platys (and a Molly) or are the extra stuff in Aquarium Salt
particularly beneficial.

Rock salt is fine for platies and mollies. If your tapwater is
unusually soft, Aquarium salt made from seawater adds some hardness and
minerals that are good for livebearers.
