I have small rock with 3 brown polyps (no idea of the actual name), and
I would like to get these to multiply and cover a larger rock that I
sat the smaller rock on. Will this occur? How can I stimulate the
growth of the polyps?

Some polyps will take small pieces of food, but without knowing what kind of
polyps you have I can't say if these will take food. But if they will
accept food they will grow much quicker from some feedings.
They will spread by themselves, quite quickly over time if they are happy.
You can spread them by just cutting them at the stalk and using super glue
to attach the stock to another rock. Just blot dry the rock and the polyp
stock and put a dab of super glue on it. Then attach and just leave out of
the water for a few minutes for the glue to bond and dry. Then just stick
them back in the tank. Within a day the polys will inflate again and look
fine. The tissue (base) that was left on the rock will grow another polyp.
Most polyps are virtually impossible to destroy. I have hacked and scraped
rocks that had zoo's on them. I thought all the tissue was gone. 6 months
later a large thriving colony was back in it's place. If you want more
