I've got a 55 gallon tank that is established. It's bare bottom and I have some potted plants that are thriving. I'm toying with the idea of adding gravel and taking the plants out of the pots. I removed the gravel because of all the crap that accumulated when I had goldfish. Now the tank houses guppies, platies, tetras, and shrimp.

What are people's opinion of going back to gravel for plant purposes? Will adding gravel at this point upset the balance?

No. If it were me I'd leave the plants in the pots though. There's no
advantage to taking them out and it'll only set them back a bit.

Just make sure that you wash the gravel thoroughly, then wash it again.
