I've read a lot of posts that mention the panda cory. Was at my LFS
and saw them. Fell in love with them right away. I got two to put in
my 3g with my betta
Question is, would I be pushing it if I got one more? I think they'd
"play around" even more.

Yes you would IMHO. 2 is enough until you get a bigger tank.

You probably would, especially as they grow. But if your tank was
heavily planted (real, not plastic), and you did frequent water changes,
you might get away with it for a while.
That's the opinion of a relative newbie, so take it for what it's worth.
But I'm amazed at the difference the plants make.

Cories do better and are much more social in groups at least 4 but ideally 6
or more. You're right that more would 'play around' but you just don't have
the room.
And keep an eye on the little guys. Pandas are notorious for being extremely
fragile and dying.
