What causes fish to simply waste away? I've had it happen to several
recently - not all at once, usually just one at a time. Doesn't look
like it's a water quality issue. Is it parasites? Virus?

It can be from several reasons.
First, what type of fish are these?
Did you introduce any new fish lately without quarantining them?

Age might be one especially if the fish is short lived like guppies. Later!

Not guppies. Affected fish so far are Hockey-stick tetras and golden
danios. This is in an established tank, and the fish have been there
since Fall last year.

One at a time - parasites, which re-infect another fish by leaving the
dead body and getting eaten, or being consumed with the dead body by the
other fish. There are parasitic treatments, or just isolate the infected
fish to break the sequence. jmo

Always a troubling event. A little more info would be helpful. What kind
of fish? What size tank? Water parameters (ammonia/nitrite/nitrate etc).

Danios, tetras, ottos, mollies. 130 gallon tank, right now
underpopulated (about 20-30 fish). The only thing registering a value
on the test kits is the phosphate, at about 1 ppm. Moderate hardness
last time I checked (should do that again, but I don't expect it to have
changed much).
I'll have to get my 10 g tank up and running - been putting it off,
unfortunately.
