"The fish was documented as part of a World Wildlife Fund-National
Geographic project to identify and study and conserve freshwater fish
around the world that exceed 6 feet in length..."
That's an odd way to study and conserve a fish- toss it onto a tarp out
in the sun. And then, finally, eat it:

I think the fish of the world would probably prefer it if the WWF and
National Geographic stopped trying to help them.

The museums of the area don't have the capacity to deal with fish like
that, and Thailand prohibits export of organisms for scientific
purposes (like all third world countries, due to fear of being
'stripmined' by pharmaceutical companies).
Also according to one local newspaper they tried unsuccessfully to
convince the fishermen who'd caught the fish to release it.

They actually do good work, and that species needs study. It is
critically endangered due to overfishing.
As other have noted, "the worlds largest" seems a misunderstanding. It
refers to the whole WWF study, which is on the Worlds Largest <species
of> Fish, plural, not this particular fish or species, which although
big is AFAIK still smaller than both european wels and sturgeon.
All species of very large freshwater fish in the world are endangered,
nearly all due to overfishing.

The catfish had died. Then it went to feed the town.
It was going to be donated toa publiuc aquarium, or other large
aquaria, but died before they got there.
What's the best thing to do with an enormous, freshy caught dead fish
when you have very hungry people in your village?
Feed them.
