All the recipes say beef heart. why? I made some and used stewing beef
well trimmed etc. The fish seem to really like it. It all gets eaten
quickly.

I asked this question elsewhere recently. I was told that beef
heart is much cheaper and has less fat than other cuts of beef. Any
"nasties" in beef (ie., pesticides from feed, antibiotics, etc) are
usually pooled in the fat. The "nasties" won't affect humans at
100+ pounds but a creature only a few ounces in body weight may be
more affected.
As to where people buy beef heart, they said they asked their local
butcher to get it for them. For people with a lot of discus, I'm
sure expense is more important.

Beef hearts are cheap, put it through a food processer and freeze in small
amounts.
That way it will last for months, but remember that that type of food will
hype-up your fish, into breeding, fighting, etc,

So you know, Untergasser says beef heart leads to fatty degeneration of
the liver and intestinal impactions in discus. I don't feed it to mine.

My fish is spoiled rotten because he wouldn't eat for over a week when I
first got him. He's now eating frozen bloodworms, live brine shrimp,
and live blackworms, and I'm trying to get him to eat the Spectrum
pellets he was eating in LFS. I've not had any luck with the pellets so
far and I think I'm going to have to let him get good and hungry before
I offer them again. I've also fed discus Tetra's ColorBits with good
results.
Once the fish is on pelleted foods, I'll wean him off of the blackworms
and just use the bloodworms and brine shrimp. I haven't ever had
trouble feeding blackworms because I keep them scrupulously clean, but
live foods other than brine shrimp still make me nervous with discus.
