I know this question depends in part on the size of the skimmer, but I was
looking at one for which the manufacturer recommended a 500+ gph pump. I
realize part of that is going to be air, but that seems like an awful big
pump. The skimmer uses a becket injector instead of a needle wheel. Does
anyone have any input on these types of skimmers?

No not really. A 500gph pump is not a big pump, even for a
skimmer, unless you have a tiny tank.
