Instant Ocean is the brand I've seen the most, but what are the "good"
brands, and the brands to avoid? I understand that some have a higher
phosphate\nitrate content than others.

Um, salt wars. Always fun.

Few have the tools or time to answer your question with
authority, as of this exact moment in the formation of the
Universe.

Here's one group trying, in what looks like a reasonable way:

Conclusion: Crystal Seas Bioassay Formula doesn't kill so
many sea urchin spawn as two other name brands. Oh, better
sit down before reading, looks like IO "sucked the most".
Crystal Sea Marinemix Bioassay "sucked the least". And
everything sucked compared to running a hose to your nearest
ocean.

LOL.

Oceanic *just* released their own salt version, and the test results I read from
one guy were impressive. I've been using Kent's Sea Salt for years and am happy
with it, but I'm intrigued by Oceanic's salt.

Ohh, guess I found one of the controvertial bits, eh? Kind of like asking
about PC vs. Mac in one of the tech groups? The guy at Petsmart talked up
the new Oceanic quite a bit, but I took it with a grain
of..umm..salt..seeing as how I was at Petsmart, and usually get wrong
information if I'm silly enough to ask for it. He just walked up and
volunteered the opinion as I was reading the bag.

The bottom line is, pick one and stick with it for the life of your tank. It
doesn't matter so much which one, they all have their strong, and weak,
points.
