Can this be done? They guy at my LFS didn't seem to think there was
anything you could to encourage coraline to spread and grow. Was he
right?

you can encourage it (assuming you have some to encourage in the first
place) by keeping water conditions optimal. 8-11 dKH Alk, 400+ Ca, minimal
NO3 and Zero PO4

elevated levels of O2 in the water also help considerably, this can most
often be encouraged by high flow.

Last year I was preparing to move, and get a new tank, and sort of let my
old tank slide somewhat.....

I had, bar none, the best growth of coralline algae I've ever seen
(red/purple, and lots of the bright pink plating stuff) I've EVER seen.
Covered ALL rock.

This was in a tank with high NO3, high P04, the only remaining lights two
30W normal-output flourescents that were over two years old without being
changed over a 30 gallon tank, and a single powerhead providing weak flow.

Honestly I think the problem with coralline for a lot of people is they may
have too much light for it, now that pretty much EVERYBODY is going bonkers
for MHs and such.

I tend to agree with that - I have 2x 96W over my 30g (3 feet long)
and I see the most coraline algae grow not under direct light...

you need low light levels and lots of KalkWasser, when coralline algae dies
it doesn't decay it turns into calcereous sand.

My son's 29g, which is probably the most neglected tank in our home, has 2x20"
VHOs over it, a single MaxiJet 1200, and a Remora Pro. And coralline is
growing all over the glass now, with nothing (NOTHING added besides RO/DI top
off.

In my other 29g reef, coralline grows under 165w of PC lighting, and daily
dosing of B-Ionic. The coralline grows nicely in my 55g under 570w of MH/VHO
lighting, also using B-Ionic.

To help it spread, when you see it on the glass, scrape it off and the little
chips will spread it elsewhere in your tank.
