I have a dozen of Cardinals in an 100 gallon tank.
they do need plenty room for swimming and water quality should be good as
well....
Try feeding them every other day maybe this should do the trick.
Test your water maybe there is something in the water ?
How are the other fish doing ???? tank temperature ??? can you identify and
signs of disease ?

When you say losing their color...Does that mean they're blanching their whole
body color or is it in one spot..and the spot looks thickened?
The sunken in bellies is not a good sign.

When do you feed them? Cardinals (and all smaller tetras) will fade their
colours out at night, and can be slow to get going again when the lights are
turned on in the morning. If fed right away, they will sometimes ignore the
food until they're fully awake. Sunken stomachs are definitely not good
though. I would go with gizmo's advice to feed only every other day, in the
middle of the day, or whenever you notice they're most active. Are any of
the other fish having problems? How old are the cardinals?
