I have a new batch, they are doing well, some are growing much faster
than others.
I recently read that with Koi the fast growing ones are less desirable
and are one of the first to be culled.
does anyone know if goldfish are the same, should I separate the big
ones to give the younger ones a better chance?

The only reason I can think of is that the larger ones would turn their
smaller mates into dinner. From a survival point of view, the faster growth
rate is desirable. The runts of the litter rarely survive with out human
intervention.
I think if you're going to cull excess fish, you should separate the fish
based on desirable features. Fin shape, color, etc. Give the excess to a
local pet store or send them to fish heaven.

This happens with both GF and koi and I'm sure most, if not all, other fish
as well.

Not true at all. You cull by QUALITY, not size.

YES!!!! And do it as soon as possible so the gap doesn't widen to there
the largest start seeing the smallest as snacks. At that time remove all
those that may have deformities such as missing eyes or deformed or missing
fins or gillcovers.
