The colour may become better as they age and mature.
But what do you have to lose by trying other foods? It seems to be working
for other fish, and a single item diet is never a good idea in long range
maintenance.

I think they'll color up a little over time, but you'll get the best colours
from convicts only when they're mature and breeding...
