The August issue of Sunset magazine (not sure if it is published in the East)
has two pages of watercress recipes for those of us who have watercress that is
on the prowl.
How does Hot Beef and Wilted Watercress Salad sound?
Then there is Watecress Vichyssoise, Double-Cress Salad, Creamy Watercress
Dressing and Halibut (!!!) with Watercress Pesto.

Oh gosh ... now I'm hungry!
We get the magazine here in Missouri - it's a very good
one. Now for an evening trip in to Barnes and Noble ... ;-)

I'm familiar with the magazine, but I must confess that I rather hope that
the "Hot Beef and Wilted Watercress Salad" stays on your side of the
Mississippi River!
Actually, the "Halibu with Watercress Pesto" might have possibilities. A
while back, we went to Alaska & my husband caught a halibut; talk about
efficient fish processing! I barely had time to photograph the fisherman &
his prize before the halibut was taken across the street to be flash-frozen
& prepared for shipment. The Halibut was great! (and I'm not one to eat
fish if there are any other menu choices!)
