Missing anything?
 
I just stuck a LR into my tank and the Ammonia levels have shot up and I
imagine Nitrite will shoot up soon too for the curing process...Other than
watching the salinity, what do I have to check to make sure the live rock
doesn't die?

I have checked the PH as well and it's at 8.0.

Sounds like it was uncured. Just test Ammonia Nitrite and Nitrate.

When the first two are '0', your tank is safe for more livestock. Your rock
should be fine.
