How much is too much?
 
I just realize that even though my nitrite test showed zero, my nitrates are
through the roof. I did a 33% water change right away. How often can I
change the water without messing something else up?

I wouldn't do more than 25% every 2-3 days. Unlike AM3/4 & NO2, Nitrate
(NO3) should be reduced gradually. It's likely to not be bothering the
fish too much, if it had climbed slowly. JMO
