I've heard of these fish being very susceptible to stray electric
currents from faulty heaters and powerheads, but my first guess would be
an internal infection of some sort as Elaine mentioned.

3, and I had him before the Discus.

I have no doubt he may have had some illness, but I'm wondering whether
anyone has had experience with a ghost knifefish dying without
displaying any symptoms ahead of time. I'm puzzled because literally
10 hours before I found him, he was swimming around eagerly, eating out
of my hand, and looking very healthy.

Hmmm... Three weeks is short enough that he could have had an internal
infection of some sort from the fish store. It may not have anything
to
do with your tank. You're very brave to put an unquarantined fish in
with discus.
