One of my favorite salads:

Thinly slice partially peeled cucumber (stripes of green left on),
tomato, onion. A mandolin slicer works well. Proportions are
scientific: I use "mostly cucumber", "some tomato", and a "little bit
of onion". Adjust as desired.

Add olive oil, red wine (or any) vinegar plus a dash of garlic
powder/salt. Proportions up to you.

Salt and pepper if wanted.

Mix it all up.

This is good fresh, or even after "marinating" in the fridge for a
while.
