Can anyone give me any tips on how and when to remove the adult fish

Depends
Are they in a tank or in a pond? In my experience you must remove them ASAP, ie as soon as they stop spawning & before they get a chance to eat all their produce. My Fantails & Shebunkins spawned in October & there must have been hundreds if not thousands of eggs. I removed the pot plants that they spawned in to another area & now have so many I have NO idea what I will do with them when they reach a reasonable size. I also note that some fish grow faster than others...the shebunkins have got quite large, quite fast, but the fantails seem to take longer to grow, & some are a lot bigger than the others. GF are popular sellers, at least where I live. I found an outlet that paid me .50 ea. for the smaller fancy GF. I don't raise the "feeder" type. Call around and ask. Also there's the option of putting index cards in stores. I've sold some that way as well. Find out about your local pond club. Ponders may be interested.
