Default noisy overflow

My overflow is noisy as heck. The water "gurgling" keeps me up at
night. Any suggestions on how to silence it?

Correct. In the meantime, you can get a length of 3/8 vinyl tubing,
(about 18" to start) and insert it down the drain. It may take a day
or so to find the 'sweet spot', but this will cut down the gurgle.

I did this for a while, but grew weary of my sump going dry because
the sponge was clogging.

after mine ran for a couple of months the gurgling pretty much stopped. I
am assuming a nice slick slime coat built up on the plumbing and hoses, but
I don't know for sure. All I know is that it no longer gurgles.
